comp vs comp how to?

Hi, I just got Deep Hiarcs chess explorer for mac. Could you please walk me
through setting up comp vs comp so I can watch the engine play itself?

Choose Play->New engine match... from the menu.

Then fill in the options how you would like the match and between which engine and time controls etc. Click OK and the match will begin.

When I click play I don't see "new engine match" just "new game" and then after clicking new game it shows me then the engine I want to play against but no engine vs engine options.

It sounds like you have a version prior to that when engine matches was introduced. You can update to the latest version for free, simply choose Help->Check for updates and follow the instructions.
